Confetti Mushroom and Rice Side Dish

Ingredients

  • 2 Tbsp butter or margarine
  • 1/2 cup diced red bell pepper
  • 3 Tbsp green onions, sliced
  • 1 cup uncooked long grain white rice
  • 1/2 tsp dried thyme
  • 2 cups chicken broth
  • 2 - 4.5 oz jars sliced mushrooms, drained

Preparation

Step 1

Melt margarine in medium saucepan. Add bell pepper, onions and uncooked rice. Saute for 2 to 3 minutes until vegetables become tender and rice begins to brown. Add thyme, chicke broth and mushrooms; bring to a boil. Cover; reduce heat and simmer for 20 minutes or until liquid is absorbed. Let stand 5 minutes.
