Ingredients
- 5 oz chicken breast
- 1/3 cup pineapple chunks w/juice
- 1 t lemon juice
- 1 T soy sauce
- 1/4 red onion
- 1/4 red bell pepper

Requires 4 hours marinating time. Cut chicken breast into 1 inch pieces, place in resealable bag. drain pineapple chunks, reserving juice. For marinade, combine 2 T of reserved pineapple juice with lemon juice and soy sauce, pour over chicken. Seal bag and set in a shallow dish in the refrigerator. Marinate in refrigerator for 4 to 24 hours, turning bag occassionally. To prepare vegetables, wash red onion and cut into thin wedgers, cut washed bell pepper into 1 inch chunks. Drain the chicken reserving marinade. Heat marinade in microwave for 1 minute. Using 12 inch skewer, alternately thread chicken,onion, bell pepper and pineapple chunks. Brush kabobs with marinade. Preheat broiler. Place kabob on broiler rack and broil until chicken is no longer pink and fruit is heated through, turning once halfway through broiling, about 10-14 minutes. Brush with marinade after turning.
