Ingredients
- 16 shrimp med to lg, cleaned & deveined
- 4-8 oz feta, crumbled
- 2 t dried oregano
- 2 med ripe summer tomatoes, chopped (reserve juices)
- 1 lb dried fettuccini or angle hair pasta, cooked al dente & held
- 2-3 T amontillado sherry
Preparation
Step 1
Sauté shrimp in lg skillet for 2-3 min, add chopped tomatoes with juice, oregano & feta cheese. Cook 3-5 min, add sherry & toss with cooked pasta.
