Ingredients
- 8 oz London broil sliced into short thin strips
- 2 TBS soy sauce
- 1/4 C plus 2 TBS oil
- 10 scallions green parts thinly sliced white parts cut into 1 inch pieces
- 2/3 C chopped red bell pepper
- 1 TBS finely chopped fresh ginger
- 2/3 C frozen peas thawed
- 3 large eggs lightly beaten
- 1/2 tsp sugar
- 4 C cooked white rice chilled
Preparation
Step 1
In a med bowl toss the beef with 1 TBS soy sauce.In a large nonstick skillet heat 2 TBS oil over med high heat. Add the beef and cook stirring for 2 min transfer to a bowl. In the skillet heat 1 TBS oil over med high heat. Add the scallion whites bell pepper and ginger and cook stirring for 2 mins stir in the peas. Push the beggies to one side of the skillet add 1 TBS oil and pour in the eggs. Stir the eggs until they begin to set then stir in the veggies. Add the egg/veggies mixture to the beef stir in the sugar and the remaining 1 TBS soy sauce. Heat the remaing 2 TBS oil in the skillet over med high heat. Add the rice breaking up any clumps then cook without stirring until heat through 2 mins . Stir in the beef mixture and scallion greens.
