Scallops in fresh tomato and herb sauce

Ingredients

  • 2 Tbsp vegetable oil
  • 1 medium onion, peeled and diced
  • 1 clove of garlic, minces
  • 3 1/2 c fresh tomatoes, peeled
  • 1 can of tomato puree
  • 1 can of tomato paste
  • 1/2 dry red wine
  • 2 Tbsp chopped fresh flat leaf parsley
  • 1 Tbsp fresh oregano, chopped
  • 1 1/2 pounds of sea scallops, cleaned and drained
  • 1/4 tsp ground black pepper
  • cooked pasta or rice

Preparation

Step 1

Heat oil in skillet, over medium heat until hot. Add onion and garlic. Cook and stir 7 to 8 minutes or until onions are soft and transluscent. transfer to 4 1/2 quart slowcooker.

Add tomatoes, tomato pureee, tomato paste, wine, parsley, oregano, and pepper. Cover; cook on low 6 to 8 hours or on hig for 3-4 hours.

Turn crock pot slow cooker to high. add scallops. cook 15 minutes or until scallops are just cooked through.

Serve over rice or pasta
