Sweet Potato Salad

Ingredients

  • 1 pound sweet potatoes
  • 2 T chopped onion
  • 1/4 c. oil and vinegar dressing
  • 1 c red bell pepper cut into 1 inch pieces
  • Salt and pepper to taste

Preparation

Step 1

Peel potatoes and put in cold water. Cover and bring to a boil. Cook 10 minutes or until potatoes are cooked through. Mix onion into dressing. When potatoes are cooked, drain and place in a bowl. Toss with the onion and dressing and add red bell peppers. Add salt and pepper to taste.
