Amaretto Peach Cheesecake

Ingredients

  • Crust
  • 3 T butter
  • 1/3 c sugar
  • 1 egg
  • 3/4 c flour
  • Filling
  • 24 oz cream cheese, softened
  • 3/4 c sugar
  • 3 T flour
  • 3 eggs
  • 16 oz peaches drained, puréed
  • 1/4 c Amaretto (almond liqueur)
  • Garnish: peach slices & sliced, toasted almonds

Preparation

Step 1

Combine butter & sugar until light & fluffy. Blend in eggs. Add flour; mix well. Spread dough onto bottom of 9 in springform pan. Bake at 450 for 10 min.

Combine cream cheese, sugar & flour, mixing at med speed on electric mixer until well blended. Add eggs 1 at a time mixing well after each addition. Add peaches & liqueur; mix well. Pour over crust. Bake at 450 for 10 min. Reduce oven temperature to 250; continue baking 65 min.

Loosen cake from rim of pan; cool before removing rim of pan. Chill. Garnish with peach slices and sliced, toasted almonds, if desired.
