Ingredients
- 1/4 C olive oil
- 4 large thinly sliced scallions
- 3 cloves thinly sliced garlic
- 6 finely chopped slices prosciutto
- 18 coarsely chopped Greek olives
- 1 3/4 lb. shrimp
- 1/4 C white wine
- 1 T butter
- 1 T lemon juice
- Salt & pepper
Preparation
Step 1
Heat olive oil in large skillet. Add scallions & garlic & cook over mod heat til softened, @ 3 min. Add prosciutto & cook 2 min. Add olives & stir 1 min to heat thru. Add shrimp & cook, turning once or twice.
Remove skillet from heat. Stir in butter & lemon juice; season with salt & pepper. Serve.
