Sauted Shrimp with Green Olives, Scallions & Prosciutto

Ingredients

  • 1/4 C olive oil
  • 4 large thinly sliced scallions
  • 3 cloves thinly sliced garlic
  • 6 finely chopped slices prosciutto
  • 18 coarsely chopped Greek olives
  • 1 3/4 lb. shrimp
  • 1/4 C white wine
  • 1 T butter
  • 1 T lemon juice
  • Salt & pepper

Preparation

Step 1

Heat olive oil in large skillet. Add scallions & garlic & cook over mod heat til softened, @ 3 min. Add prosciutto & cook 2 min. Add olives & stir 1 min to heat thru. Add shrimp & cook, turning once or twice.
Remove skillet from heat. Stir in butter & lemon juice; season with salt & pepper. Serve.
