Ingredients
- 1 lb. shrimp
- 2 T olive oil
- 1 1/2 T lime juice
- 1/2 t lime zest
- 1 jalapeno, finely chopped
- Salt
- 1 seeded & chopped small papaya
- 1/2 sliced small red onion
- 1 rib celery, sliced diagonally
- 1 bunch watercress
- 1/2 C cilantro
- 1/4 C salted cashews, coarsely chopped
Preparation
Step 1
Cook shrimp & plunge in ice water to cool; drain & pat dry.
In large bowl, whisk olive oil with lime juice, lime zest, jalapeno & salt. Add papaya, onion, celery, watercress, cilantro & shrimp; toss gently. Scatter cashews on top & serve.
