Ingredients
- 2 T olive oil
- 1 finely chopped med. onion
- 3 cloves crushed garlic
- 3 C cannellimi beans
- 14 oz. crushed tomatoes
- 1 t salt
- 1/2 t rosemary
- 1/2 t pepper
- 4 C chicken broth
- 1 lb. shrimp
- 1/4 chopped parsley
Preparation
Step 1
Heat olive oil in large casserole. Add onion & garlic & cook over mod hi heat, til onion softens, @ 5 min. Stir in cannellini beans, tomatoes, salt, rosemary & pepper. Add stock & bring to boil. Reduce heat to mod-lo & simmer til stew is slightly thickened, @ 15 min. Add shrimp & simmer @ 1-2 min. Stir in chopped parsley & serve.
