Ingredients
- 13.75 oz jar artichoke hearts packed in water drained
- 10 oz package frozen chopped spinach thawed and squeezed
- 1/4 c chopped shallots
- 1 clove garlic
- 1/2 each fat free Greek yogurt and light mayo
- 2/3 c Parmesan Reggiano cheese
- 4 oz part skim shredded mozzarella cheese
- salt and pepper to taste
- cooking spray
Preparation
Step 1
heat oven to 375
in small food processor coarsely chop artichoke heart hearts, garlic and shallots
combine all ingredients in medium bowl
spray oven proof baking dish with with cooking spray
place mixture in dish and bake 20-25 mins-serve right away
**you can make one day ahead and refrigerate until baking
