Grilled Champion Lamb Burgers

Ingredients

  • 2 lg red onions, thinly sliced
  • 2 t EVOO
  • 1 T red wine vinegar
  • 2 t minced fresh rosemary
  • 1 1/2 t sugar
  • 1 t stone ground mustard
  • 1 \4 t salt
  • 1/4 t pepper
  • Burgers
  • 2 lbs ground lamb or 1 lb each ground lamb & lean beef
  • 2 garlic cloves, minced
  • 1 t salt
  • 1/4 t pepper
  • 6 pita pocket halves
  • 2 T EVOO
  • 1 1/2 c spring mix salad greens

Preparation

Step 1

In skillet sauté onions in oil until tender. Add vinegar, rosemary, sugar, mustard, salt & pepper; cook 5 min longer. Keep warm

Crumble meat into lg bowl; sprinkle with garlic, salt & pepper & mix well. Shape into 6 patties. Grill burgers covered over med heat 4-6 min on each side until juices run clear (160).

Brush pita pockets with oil; lightly grill on both sides. Serve burgers in pita pocket with lettuce & onions.
