Grilled Gingered Swordfish

Ingredients

  • 4 swordfish steaks
  • 2/3 C soy sauce
  • 1/4 C dry sherry
  • 1 small minced carrot
  • 1 clove minced garlic
  • 1 T minced red bell pepper
  • 1 1/2 t minced ginger
  • 2 finely chopped scallions
  • 1 t lemon zest
  • 2 t olive oil

Preparation

Step 1

Place swordfish in shallow glass dish. combine soy sauce, sherry, carrot, garlic, red pepper, ginger, scallions & lemon zest. Pour over fish steaks. Let marinate 1 hr. remove fish from marinade, pat dry & brush with olive oil.
Grill, basting occasionally with marinade til fish is opaque throughout. 4-5 min per side.
