Portobello Parmesan Pasta

Ingredients

  • 1 tsp Olive oil
  • 1 lb sliced Portobello mushrooms
  • 1 tsp dried oregano
  • Sale and Pepper
  • 1 1/2 C low fat tomato sauce
  • 1 C fresh basil torn into large pieces
  • 1/2 C shredded mozzarella cheese
  • 1/2 C grated Parmesan

Preparation

Step 1

Heat oil in large skillet over medium high heat.
Add mushrooms and sprinkle with the oregano and salt and pepper to taste
Cook for 3 minutes
Add the tomato sauce and basil and mix well.
Sprinkle shredded mozzarella over the sauce and cover the skillet
Simmer 5 minutes to warm the sauce and melt the cheese
Remove from heat and spoon Paremsan cheese on top

Serve over pasta
