Ingredients
- 4 plum tomatoes, seeded & chopped
- 1/2 c shredded Parmesan cheese
- 1/4 c minced fresh basil
- 3 T EVOO
- 2 T minced fresh parsley
- 3 garlic cloves, minced
- 2 t balsamic vinegar
- 1/8 t salt
- 1/8 t crushed red pepper flakes
- 1/8 t ground pepper
- 10.5 oz French baguette cut into 1/2 in slices
- 1/4 c butter, softened
- 8 oz fresh mozzarella cheese, sliced
Preparation
Step 1
In sm bowl combine first 10 ingredients. Spread baguette with butter; top each with cheese slice. Place on ungreased baking sheets. Broil 3-4 in. from heat 3-5 min until cheese is melted. With slotted spoon, top each slice with 1 T tomato mixture.
