Ingredients
- 3 T lime juice
- 1/4 c red onion
- 1/4 t kosher salt
- 2 T mayo
- 1 avocado, chopped
- 1 can beans, rinsed
- 2 roasted or fresh red, yellow or orange peppers-chopped
- freshly ground pepper
- 6 c romaine
Preparation
Step 1
Wisk first 4 ingredients
Add next 3 items and lots of pepper and mix gently
Arrange romaine on plates and spoon dressed avocado over it.
