Ingredients
- 1000 ml Lemon Juice
- 400 g Sugar
- 30 g Gelatin
- 1500 ml Whipped Cream
Preparation
Step 1
-Add enough water to the sugar to make it like a wet sand consistency.
-Bring it to a light caramel.
-Deglaze with the lemon juice.
-Bloom gelatin and incorporate into lemon mixture. Allow to cool to room temperature.
-Whip cream to soft peaks and fold into the lemon mixture. Pipe or scoop into desired molds. Chill to set.
