WW Chicken and Corn Soup

Ingredients

  • 1 tbs + 1 tsp peanut oil
  • 1 medium onion - finely chopped
  • 1 garlic clove - minced
  • 5 oz sinned and boned chicken breast - ground
  • 2 cups water
  • 1 tbs + 1 tsp dry sherry
  • 2 tsp soy sauce
  • 2 cups canned cream-style corn

Preparation

Step 1

In medium sauce pan, heat oil; add onion and garlic. Saute 2 minutes. Add chicken; cook, stirring to break up meat, until no longer pink

Add water, sherry and soy sauce; bring to a boil. Reduce heat; simmer 2 minutes. Stir in corn; simmer 5 more minutes.

Ladle evenly into 4 soup bowls.
