Roasted Shallot Yogurt Dip

The lower fat version of a popular onion dip.

Ingredients

  • 6 unpeeled shallots
  • 3 unpeeled garlic cloves
  • 2 Tablespoons olive oil
  • 1 Cup greek yogurt
  • 3 Tablespoons chopped chives
  • Salt

Preparation

Step 1

Toss shallots and garlic cloves in oil, spread on a baking sheet. Bake at 350 until soft, 20 to 30 minutes. Cool, then peel. Finely chop and mix with yogurt, chives, and salt to taste. Top with more chives. Serve with potato chips, tortilla, chips, pita chips, veggies...
