Gumbo - Shrimp (Or Chicken & Smoked Sausage)

Ingredients

  • 1/4 c all purpose flour
  • 1/4 c canola oil
  • 3 ribs celery, chopped
  • 1 med onion, chopped
  • 32 oz chicken broth
  • 1 med green pepper, chopped
  • 3-5 cloves garlic
  • 1 t salt
  • 1 t pepper
  • 1/2 t cayenne pepper
  • 2 lbs uncooked lg shrimp, peeled & deveined
  • 16 oz pkg frozen sliced okra
  • 4 green onions, sliced
  • 1-2 med tomatoes, chopped
  • 1 1-2 t gumbo file powder
  • Hot cooker rice

Preparation

Step 1

In Dutch oven over med heat, cook & stir flour & oil until Carmel colored (12 min). Do not burn. Add celery, green pepper & onion. Cook & stir 5-6 min until tender. Stir in broth, garlic, salt, pepper & cayenne. Bring to boil. Reduce hear; cover & simmer about 30 min.

Stir in shrimp and/or other meat, okra, green onions & tomato. Return to boil. Reduce heat. Cover & simmer 10 min until shrimp turn pink. Stir in file powder. (Can replace file powder by combining 2 T cornstarch & 2 T water until smooth. Gradually stir into gumbo. Bring to boil & stir for 2 min until thickened.

May add options: 2 sm cayenne peppers, pinch of thyme, 2 more garlic cloves, add'l can of tomatoes (or tomatoes with green chilies to replace chopped tomato & cayenne). Can add bay leaf. Can use cooked chicken & smoked sausage instead of shrimp.
