BEET PICKLES WITH HORSERADISH

Ingredients

  • 7 quarts (28 cups) beets (cooked and put through food chopper)
  • 1 cup horseradish ( I use prepared Horseradish)
  • 4 cups white sugar
  • 4 cups white vinegar
  • 2 Tablespoons salt
  • 2 Teaspoons pepper

Preparation

Step 1

Mix white sugar, vinegar, salt and pepper and bring to a boil. Mix the shredded beets with horseradish and add to the vinegar mixture, bring to a boil and mix well. Fill sterilized jars and seal.

NOTE; YOU CAN MAKE HALF THE RECIPE AND ADD HORSERADISH TO SUIT YOUR TASTE.
