Italian Sausage Spaghetti

Ingredients

  • salt and pepper
  • 1 lb of spaghetti
  • 2 tablespoons of olive oil
  • 1 lb of sweet or or hot ground italian sausage
  • 1- 28oz. can of diced tomatoes
  • 1 large clove of garlic
  • 1 tsp. crushed red pepper
  • 2 tablespoons balsamic vinegar
  • 1/2 c. grated parmesan

Preparation

Step 1

Cook pasta and set aside.

Warm oil in a large skillet. Add sausage and cook until no pink is left. Stir in tomatoes with juice, garlic, 1/2 tsp. salt, 1/4 tsp. pepper and crushed red pepper. Bring to a boil, then reduce to low heat and simmer until thickened. Mix in vinegar and cook a minute longer. Remove from heat.

Serve over hot pasta. Taste and adjust seasonings to preference.

Divide and serve with parmesan.
