Shrimp Chowder

Ingredients

  • 1 T vegetable oil
  • 1/3 c chopped green pepper
  • 1/3 c chopped celery
  • 1/4 c chopped onion
  • 16 oz. diced tomatoes
  • 1/2 c water
  • 1 clove minced garlic
  • 1 bay leaf
  • 2 T parsley
  • 1/2 t dill
  • salt, pepper, tabasco
  • 1/4 lb shrimp

Preparation

Step 1

Heat oil, add pepper, celery & onion. Cook about 6-8 minutes. Add tomatoes with juice, water, garlic, bay leaf, parsley, dill, salt, pepper and tabasco; bring to boil. Reduce heat, cover and simmer 30 minutes, stirring occasionally. Add shrimp and cook until pink about 3 minutes. Remove and discard bay leaf.
