Cream of Tomato Soup with Acini di Pepe

A delicious creamy tomato soup. You can use the pasta or you can do rice. Just substitute rice for the Acini di Pepe.

Ingredients

  • 1/3 cup Acini di Pepe (about 1 cup cooked)
  • 2 tbsp butter
  • 1 small onion, diced
  • 1 carrot, diced
  • 1 14.5oz can crushed tomatoes (You can use 2 cans if you want more tomato)
  • 1/2 tbsp Italian Seasoning
  • 2 cups chicken broth
  • 1 cup heavy cream
  • salt and pepper to taste

Preparation

Step 1

1. Prepare Acini di Pepe according to package and set aside.

2. Heat butter in a large saucepan. Add the onion and carrots, saute until tender, 6-10 minutes.

3. Add tomatoes, italian seasoning and chicken broth. Heat to simmering.

4. Heat the cream in a small saucepan until simmering, gradually whisk into the tomatoes. Do NOT Boil.

5. Add the cooked Acini di Pepe and heat through. Add salt and pepper to taste. Serve hot.
