Ingredients
- 1 1/2 tsp olive oil
- 1 lb large shrimp-peeled, deveined & chopped
- 3/4 cup fresh corn kernels (2 ears)
- 1/4 cup mayo
- 1/4 cup pesto
- 2 tbsp fresh lemon juice
- 1/2 red bell pepper, diced
- 3 scallions, sliced thin
- salt & pepper
- 4 hot dog buns/hoagie rolls
Preparation
Step 1
In med skillet, heat the olive oil over med-high heat, add shrimp, cook, stirring until opaque about 3 min. Remove from heat, stir in corn, let cool. In med bowl, stir tog mayo, pesto & lemon juice, add shrimp-corn mix, bell pepper and scallions, toss. Season with salt and pepper, serve on buns...
