White Beans, French Style

Ingredients

  • 2 T EVOO
  • 2 garlic cloves, thinly sliced
  • Leaves from 4 sprigs of thyme (2t)
  • 1 large shallot, peeled and thinly sliced
  • 14 oz can cannellini beans, drained and rinsed
  • Coarse sea salt
  • fresh ground pepper
  • 2 t red wine vinegar

Preparation

Step 1

Heat olive oil in a large nonstick skillet over med heat. Add garlic and cook, stirring now and then, until it just begins to turn toasty and brown, 3-4 mins. Add thyme and shallot and cook 1 min more to get them just a tiny bit softened. Add beans to the pan and cook, stirring now and then, 5 mins. Add a healthy pinch of salt and a bit of pepper and vinegar and cook 5 more mins, just to let all ingredients sink into each other. Taste for seasoning; add more salt, pepper or vinegar if you like.
