Avocado Maki Sushi

  • 1 red bell pepper
  • 8 sundried tomatoes
  • 1 cup alfalfa sprouts
  • 3 large carrots
  • 1 avocado
  • 1 fresh lemon
  • Untoasted Nori

Preparation

Step 1

Grate the carrots and mix with the alfalfa sprouts. Blend the red bell pepper and the sundried tomatoes and pour over the carrots and sprouts. Squeeze lemon juice and mix together.

On a sheet of nori, add the vegetable mix with slices of avocado. Roll tightly and seal the roll by dipping your finger in a little water and rubbing it along the edge of the seaweed and then seal. Slice the long roll into individual pieces.

Repeat until your ingredients run out.

Serve with fresh ginger.
