Balsamic tuna

Ingredients

  • 4 tuna steaks, cut 3/4 " think
  • 1 tbsp olive oil
  • 1/2 sweet onion, diced
  • 1 clove garlic, minced
  • 2 plum tomatoes, diced
  • 2 tbsp orange marmalade
  • 4 tbsp balsamic vinegar

Preparation

Step 1

Preheat oven to 450. Spray baking dish with cooking spray. Place tuna in dish. Bake 6-8 minutes or until flakes easily with a fork.

Meanwhile, in large skillet, heat oil over med-high heat. Add onion and garlic and cook 1 minute. Add tomatoes. Stir in marmalade and vinegar. Cook, stirring, until vegatables soften lightly, about 2 minutes.

Serve over tuna
