Ingredients
- 4 large eggs
- 1 cup whole milk
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/2 tea. finely grated fresh lemon zest
- 1/4 tea. salt
- 2 T. unsalted butter
- 1 cup fruit of choice
Preparation
Step 1
1. Preheat oven to 400 F. Blend together eggs, milk, flour, granulated sugar, lemon zest, and salt in a blender.
2. Heat four 6" castiron skillets or one standard large castiron skillet over high heat. Divide butter among them, and melt. Divide batter among them, then scatter with fruit. Bake until puffed; 15-18 min for small castiron or 23-25 for large castiron. Top with additional fruit and powdered sugar. Serve immediatly.
