Dark Chocolate and Bacon Cupcakes

Ingredients

  • 12 slices of bacon
  • 2 c flour
  • 3/4 c + 1 T unsweetened cocoa powder
  • 2 c sugar
  • 2 t baking soda
  • 1 t baking powder
  • 1/2 t sea salt
  • 2 eggs
  • 1 c strong brewed coffee, cold
  • 1 c buttermilk
  • 1/2 c vegetable oil

Preparation

Step 1

Preheat oven to 375 and brew coffee. Line muffin tins. Place bacon in deep, large skillet. Cook over medium-high heat until evenly brown or cook in batches. Drain, crumble and set aside.
In large bowl, stir together flour, 3/4 c cocoa powder and the next four ingredients. Make a well in the center and pour in eggs and next three ingredients. Stir just until blended. Batter will be thin. Mix 3/4 of the bacon, reserving the rest for garnish. Spoon batter into prepared cups, dividing evenly.
Bake in preheated ove nut il the tops spring back when lightly pressed, 20-25 mins. Cool in pan set over wire rack. When cool, frost with favorite chocolate frosting and sprinkle with left over bacon crumbles and dust with remaining cocoa powder.
