Ingredients
- 3 pounds potatoes, peeled and cut into 1/8 inch slices.
- 2 tablespoons unsated butter
- 3 large cloves garlic, minced
- 3/4 teaspoon kosher salt
- 1/4 teaspoon, freshly ground black pepper.
- 4 ounces low fat swiss cheese, grated
- 1 4 ounce jar pimentos, drained
- 1 10 ounce can low fat/low sodium chicken broth.
Preparation
Step 1
With 1/2 of the butter, grease a 9X13-inch baking dish. Assemble in four layers each of the above ingrediants, using a fourth of the potatoes, cheese and seasoning layer.
Cover bottom of pan with a layer of slightly overlapping potato slices. Sprinkle with salt, pepper garlic, and cheese.
continue until you have 4 layers.
Pour broth evenly over top. Dot with remaining butter.
Bake at 375 degrees for 90 minutes.
Cover loosely with aluminum foil, the last 15 minutes if the top starts to brown too much
Let rest for 10 minutes.
