Okra Pachadi

Ingredients

  • 1 lb Okra Fresh or Frozen
  • 6 Green chilies chopped
  • 1 inch Fresh ginger grated
  • 1/2 onion chopped
  • Salt to taste
  • Oil
  • Yogurt Sauce
  • 1 container Yogurt (big one)
  • 5 Green chilies
  • 1/4 cup water
  • 1 inch grated ginger
  • Salt to taste
  • Seasoning
  • 2 tbls oil
  • 1/2 tsp mustard seeds
  • 1/2 Chillie powder
  • 1/2 Turmeric

Preparation

This is very easy to make, use frozen as it cuts down prep. If using Frozen …Heat oven to 425. Spread Okra on baking sheet sprinkle salt and oil and bake for 10 minutes. Take out stir and mix in the remaining ingredients and return to the oven for another 10 – 15 minutes.
In the meantime whisk together the Yogurt sauce ingredients and keep aside. When the roasted Okra has cooled add to sauce.
For seasoning – heat oil in a pan unitl very hot. Add mustard, once it finshes bursting take it off fire; add Chili and Turmeric (it should fry in a couple of seconds). Now add this to the sauce and mix well.
