Maple Roasted Chicken with Sweet Potatoes

Ingredients

  • 2 small sweet potatoes, peeled and cut into 1 inch chunks
  • 1 onion, cut into 1 inch wedges
  • 6 sprigs fresh thyme
  • 2 T oilive oil
  • salt and pepper
  • 3 - 4 lbs. of chicken
  • 3 T maple syrup

Preparation

Step 1

Heat oven to 400 degrees. In a 9 x 13 baking dish, toss the sweet potatoes, onion, thyme, oil 1/2 t salt and 1/4 t pepper.

Pat the chicken dry with paper towels. Season with salt and pepper. Nestle the chicken among the vegetables and drizzle with maple syrup.

Roast, stirring the vegetables once until the chicken is cooked about 50 - 60 minutes.
