Chicken Breast Diane

Ingredients

  • 4 chicken breasts
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 Tbsp oil
  • 2 Tbsp butter
  • juice of 1/2 lemon or lime
  • 3 Tbsp parsley
  • 2 tsp dijon mustard
  • 1/4 c chicken broth
  • 3 Tbsp chopped onion

Preparation

Step 1

POund breasts slightly, then sprinkle with salt, pepper. Heat 1 Tbsp each of oil and butter in skillet, cook chicken on medium-high 4 minutes on each side until done. Tranfer to plate and keep warm. Into skilletadd onion, lime or lemon juice, parsley and mustard. Cook 15 minutes, whisking frequently. Whisk in broth and remaining oil and butter. Pour over chicken and serve.
