Ingredients
- 1 medium cauliflower
- 2 c chicken stock
- 1/4 c butter
- 1/4 c chopped onion
- 1/4 c flour
- 1/2 t salt
- 1/8 t pepper
- 2 c milk
- 1 c grated cheddar cheese
- buttered bread crumbs
- parsley
Preparation
Step 1
Cook cauliflower in chicken stock until tender. Do not drain. Cool. Ru through blender to desired texxture. Set aside. Melt butter in pan. Add onion & saute. Do not brown. Mix in flour, salt & pepper. Add milk. Heat & stir until boiling. Add cheese & cauliflower mix. Stir to heat & melt cheese. Garnish with buttered bread crumbs.
