Herbed Couscous

Ingredients

  • 1 1/2 cups dry pearl couscous (8 oz)
  • 2 tsp olive oil
  • 1 1/2 cups water
  • 4 tbs chopped fresh oregano
  • 2 tbs chopped fresh mint
  • Minced zest of 1/2 lemon
  • salt and pepper to taste

Preparation

Step 1

Saute couscous in oil overe medium-high heat until light brown, 2-3 minutes.

Add water and cook according to package directions.

Toss couscous with oregano, mint and zest; season with salt and pepper.
