Ingredients
- 3 lbs. brussels sprouts, trimmed & halved
- 12 oz. thick-cut bacon, cut into 1" pieces
- 3 T EVOO
- 2 onions (1 lb) halved & thinly sliced
- Salt and pepper
Preparation
Step 1
Cook brussels sprouts 5 mins. Drain & rinse with cold water. Cook bacon until crisp, 8-10 mins. Add 2 T EVOO to skillet, then stir in onions, cook until browned, 8-10 mins. Transfer to bowl. Add 2 T reserved bacon fat & remaining 1 T EVOO to skillet. Add brussels sprouts & cook, tossing, until browning, 5 mins. Remove from heat & stir in onions & 1/2 bacon; season with salt & pepper. Top with remaining bacon.
