Ingredients
- 3/4 c roasted red peppers, drained &
- cut into strips
- 6 cups broccoli flowers
- 5 slices bacon, cut into 1/2" pieces
- 1/2 sm red onion, chopped (1/2 cup)
- 1/4 cup balsamic vinegar
- 1/2 tsp thyme
- 1/2 tsp salt
- 1/4 tsp pepper
Preparation
Step 1
Place red pepper strips on paper towels, pat dry, reserve. Steam broccoli until just tender. Drain. Fry bacon until crisp; drain. Cook onion in bacon fat; stir in vinegar and thyme. Mix broccoli, salt, pepper and onion. Stir in bacon and red pepper strips.
