Ingredients
- 2 eggs
- 1/2 C evaporated milk
- 1 C plain yogurt
- 1/2 C grated swiss cheese
- 1/3 C crumbled feta cheese
- 1/3 C fresh parsley
- 1/4 C fresh basil or 1 t dried basil
- 1 t oregano
- 1 clove garlic, chopped
- 9 oz. fresh angel hair pasta (deli)
- 1 lb. peeled shrimp
- 1/4 C salsa
- 2-3 T butter
- 1/4 C grated Monterey Jack cheese
- 1/4 C grated Parmesan cheese
Preparation
Step 1
Grease 12 x 8 dish with 1 T butter. Spread 1/2 of uncooked fresh angel hair pasta in dish. Layer 1/2 of shrimp over. Spoon 1/4 C salsa over. Layer remaining pasta. Mixfirst 9 ingredients and spread over pasta. Top with remaining shrimp. Dot with 2-3 T butter. Sprinkle with grated Monterey Jack and Parmesan. Bake at 350 for 30-40 minutes. Let stand for 10 minutes before serving.
