Ingredients
- 2 c leeks sliced
- 1/2 c carrot chopped
- 1/2 c celery chopped
- 2 cups button mushrooms sliced
- 1 T minced garlic
- 1/4 c flour
- 1 t minced fresh thyme
- 1/4 t ground nutmeg
- 1/4 t pepper
- 1/4 c dry sherry
- 4 c chicken broth
- 2 c cooked turkey cubed
- 1/2 c heavy cream
- salt to taste
Preparation
Step 1
Sweat leeks, carrot and celery in butter in large saucepan over med heat until soft 5 mins-increase heat to med high
add mushrooms and garlic and saute 3 miins stirring often
sprinkle flour, thyme, netmeg, and pepper over vegetables-cook 1 min stirring constantly
deglaze with sherry, simmer until nearly evaporated then stir in broth, turkey and cream
bring to a boil, reduce heat to medium and simmer 5 mins
season with salt
