Ingredients
- 3 c mashed swweet potatoes (two 40 oz cans)
- 1/2 c sugar
- 1 1/2 sticks plus 1 T butter melted and cooled
- 2 large eggs
- 1 t vanilla
- 1/3 c (small can) evaporated milk
- pinch nutmeg
- 1 c firmly packed brown sugar
- 1/2 c flour
- 1 c chopped pecans
Preparation
Step 1
heat oven to 350
in large bowl whisk together sweet potatoes, sugar, 1/2 c of the butter, eggs, vanilla, milk and the nutmeg until mixture is smooth
transfer mixture to 2 quart baking dish
in a bowl stir together with a fork the brown sugar, flour, remaining butter and pecans
sprinkle over potato mixture
bake for 30 mins
