Black Bean Cakes with Mole Salsa

Ingredients

  • Salsa:
  • 1 Can (15 oz.) black beans, rinsed and drained
  • 1 egg beaten
  • 1 C shredded zucchini
  • 1/2 C dry bread crumbs
  • 1/4 C shredded Mexican cheese blend
  • 2 TBS. chili powder
  • 1/4 tsp. salt
  • 1/4 tsp.baking powder
  • 1/4 tsp. cumin
  • 2 TBS. olive oil
  • 2 med. tomatoes, chopped
  • 1 small green pepper
  • 3 TBS grated chocolate 1 green onion thinly sliced
  • 2 TBS. minced fresh cilantro
  • 1 TBS. lime juice
  • 1 to 2 tsp. minced chipotle pepper in adobo sauce
  • 1 tsp. honey

Preparation

Step 1

1. Mash beans then mix the rest of the ingredients together. Shape into 6 patties, brush both sides with oil place on baking sheet.

2. Broil 3-4 in. from heat for 3-4 min. on each side or until thermometer reads 160.

3. Combine salsa ingredients,. Serve with black bean cakes.
