Carrot Muffins

This is a favourite Sundell recipe

Ingredients

  • 2 Eggs
  • 1 cup White sugar
  • 2/3 cup Oil
  • 1 tsp Vanilla
  • 1 1/2 cup Flour
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1/2 tsp Salt
  • 1 tsp Cinnamon
  • 1 cup Grated Carrots
  • 1/2 cup Applesauce

Preparation

Step 1

1. Beat eggs, and then add sugar, oil and vanilla.
2. Combine flour and rest of dry ingredients.
3. Add to egg mixture.
4. Blend in carrots and applesauce.
5. Bake in greased muffin tins (we use muffin papers) at 325 degrees for 25 minutes.
