Ricotta Gnocchi

Made by my Nana Paparazzo.. This recipe is exactly how she makes it.. wording may sound funny but its the old Italian way..

Ingredients

  • 2 lbs whole milk Ricotta cheese
  • 3 eggs
  • 4 cups of flour

Preparation

Step 1

Sift flour

mix ricotta and eggs gradually add one cup of flour as you beat the eggs

fold in second cup of flour . fold in 3rd cup of flour

knead dough add more flour if needed

cut dough into 10 pieces

form into thin worms and cut into bite size pieces

roll bit size pieces with index finger onto strainer ( this is shaping the gnocchi)

Boil until they float..
