Scallops with Angel Hair Pasta

Ingredients

  • 2 lbs fresh sea scallops
  • 2 Tbsp butter
  • 1 cup white wine
  • 4 Tbsp fresh lemon juice
  • 4 Tbsp fresh chives chopped
  • 1/4 tsp sea salt
  • 4 cloves fresh garlic minced
  • 1/4 tsp white pepper
  • 1 lb angel hair pasta
  • 2 Tbsp chopped fresh parsley

Preparation

Step 1

1. Rinse scallops under cold water, drain
2. Add butter to large skillet and melt slowly
3. Add scalops and cook over medium heat for five to sixminutes, stirring constantly
4. Remove scallops using a slotted spoon
5. Add garic and cook for about a minte, then add wine, pepper, lemon juice and chives boil for about another minute
6. Remove from heat
7. To serve, spoon sauce over drained pasta, spoon scallops over sauce
8. Top with freh parsley and pamesan cheese
