Ingredients
- 1 whole chicken
- 3 lemons
- Salt
- 4 garlic cloves
- Olive oil
- 3 rosemary sprigs
- 1 onion sliced
Preparation
Step 1
Rinse chicken and pat dry. Puncture one lemon in several places. With your hand, separate slightly the skin from the chicken on the breast area. Sprinkle salt into the cavity. Cut another lemon in half. Squeeze the juice of that lemon into the cavity of the chicken and over the skin. Place half of the onion slices in the cavity. Place several rosemary sprigs into the cavity. Add the punctured lemon into the cavity.
Rub salt under the skin onto the breast area. Slice garlic and place under the skin. Rub olive oil all over chicken.
Heat BBQ for indirect heat. Add chicken to grill and cook for 45 minutes. Check to see if done and continue to cook, until cooked through.
