Marinated Shrimp with Mushrooms and Olives

Ingredients

  • 2 lbs. medium shrimp, cooked and deveined
  • 3/4 cup small pimiento-stuffed olives
  • 1 lb. fresh mushrooms, quartered
  • 1 cup water
  • 1/2 cup low-calorie Italian salad dressing
  • 2 tablespoons lemon juice
  • 2 cloves garlic, halved
  • 1 1/4 teaspoons salt
  • 1/2 teaspoon thyme leaves
  • 1/2 teaspoon peppercorns
  • 1/8 teaspoon ground nutmeg
  • 2 bay leaves

Preparation

Step 1

Combine all ingredients, except shrimp and olives, in a large saucepan. Bring to boiling, reduce heat, cover and simmer 5 minutes. Pour over shrimp and olives in a large bowl and toss lightly to mix. Cool. Refrigerate, covered, 6 to 8 hours or overnight before serving.

To serve, pile generous amounts of the mixture with some of the marinade onto crisp salad greens on luncheon plates OR spoon into lettuce leaf lined cocktail glasses and serve as appetizer.
