Ingredients
- For Dressing:
- For Salad: (use mandoline)
- 1/2 c. pine nuts, toasted
- 1 large head radicchio, quartered and thinly shredded
- 6 red radishes, finely sliced
- 1 fennel bulb, trimmed, halved, and finely sliced
- 1 large cucumber, sliced into 1/4" matchsticks
- 1/2 c. fresh mint leaves
- 1/4 c. lemon juice
- 1/4 c. olive oil
- 2 T. maple syrup
- 1.5 T. dijon
Preparation
Step 1
Combine vegetables in large bowl.
Puree all dressing ingredients. Season with salt and pepper. Add dressing to salad. Top with pine nuts.
