Radicchio, Radish and Fennel Salad

Ingredients

  • For Dressing:
  • For Salad: (use mandoline)
  • 1/2 c. pine nuts, toasted
  • 1 large head radicchio, quartered and thinly shredded
  • 6 red radishes, finely sliced
  • 1 fennel bulb, trimmed, halved, and finely sliced
  • 1 large cucumber, sliced into 1/4" matchsticks
  • 1/2 c. fresh mint leaves
  • 1/4 c. lemon juice
  • 1/4 c. olive oil
  • 2 T. maple syrup
  • 1.5 T. dijon

Preparation

Step 1

Combine vegetables in large bowl.

Puree all dressing ingredients. Season with salt and pepper. Add dressing to salad. Top with pine nuts.
