Ingredients
- 10 oz spiral pasta
- 6 T. olive oil
- 2 cloves crushed garlic
- 1 green onion
- 2 c. diced tomatoes
- 6 fresh basil leaves, torn
- 3 T. grated Parmesan cheese
- 1 1/2 c. crumbled feta cheese
- salt and pepper to taste
Preparation
Step 1
1. Cook pasta according to directions, al dente. Drain
2. Combine olive oil, garlic, onion,k tomatoes and basil; let sit at room temperature.
3. Toss warm pasta with Parmesan and feta. Stir in tomato mixture and sprinkle on salt and pepper. You can add more Parmesan if desired. Serve at room temperature.
